We love the freshness and quick preparation of Apple Salad with Mustard Dressing. This light salad complements a heavier entree selection.

How to Make It

Combine olive oil, vinegar, minced shallot, Dijon mustard, honey, salt, and pepper in a large bowl, stirring with a whisk. Add apple and greens; toss to coat.

Even better than I thought it was going to be! Made exactly as written and served as a side to CL's Orange-Mustard Glazed Pork Chops recipe also from Jan/Feb 2014. Look forward to trying it again when I make the Pork Paprikash dish!
