Serves 4 (serving size: 1 pizza)

Smoky bacon, rich walnuts, and woodsy thyme give depth to these quick personal pizzas.

How to Make It

Step 1

Preheat broiler to high.

Step 2

Broil pitas 1 minute or until lightly golden. Remove from oven; carefully flip pitas over. Brush evenly with olive oil. Sprinkle cheddar over pitas; arrange apple slices over cheese.

Step 3

Sprinkle Parmesan cheese, walnuts, thyme, and bacon evenly over apples. Return to oven; broil 1 to 2 minutes.

For the short amount of time needed to assemble, this tasted great and was a hit with everyone in the family.  I did add about a tablespoon of pesto as a base for each pizza rather than just brushing the pitas with olive oil.

Great for a busy weeknight dinner.  The whole family loved it.  I had some left over chantarelle mushrooms from another recipe and I sauteed them in the bacon drippings and added them as well.  Delish.  Will definitely make again.
