How to Make It

Step 1

Pour 2 1/2 qts. water into a deep pot. Add remaining ingredients except orange juice. Cover, bring to a boil, then reduce heat and simmer 30 minutes. Nest pot in ice water until cool. Discard cinnamon and stir in orange juice.

this brine made a fantastic chicken. i had grilled it on the bbq after brining it. skin was very crispy and tasty, and the chicken itself was very juicy and delicious. will definitely make it again.
