This is an excellent non-traditional tuna melt. We use whole wheat sandwich thins, lightly toasted, instead of English muffins and top the sandwich with sliced provolone cheese instead of shredded. Makes a nice lunch or light supper with broccoli soup.

We love this easy dish. We leave out the artichoke hearts. It's great for a quick meal on a cold night.
