  • Rinse fish thoroughly in cold water, and pat dry. Sprinkle fish evenly with salt and pepper, and set aside.

  • Combine eggs and milk in a medium mixing bowl; mix well. Dip fish in egg mixture, and roll in cornmeal.

  • Heat 1/8 inch oil to 350° in a large heavy skillet. Add fish, and fry 5 minutes on each side or until golden brown. Drain fish well on paper towels.

  • Transfer fish to a warm serving platter, and serve immediately with tartar sauce.
