  • Sprinkle chicken evenly with salt and pepper. Place flour and eggs in 2 separate shallow dishes. Stir together panko, Parmesan, Italian seasoning, and crushed red pepper in a third shallow dish. Drizzle panko mixture with oil, and toss to coat.

  • Working with 1 piece at a time, dip chicken in flour; shake off excess. Dip into eggs; let excess drip off. Dredge in panko mixture to fully coat. Place on a baking sheet. Repeat process with remaining chicken pieces.

  • Preheat an air fryer to 370°F for 5 minutes. Place 2 prepared chicken pieces in fry basket spaced at least 1/2 inch apart. Cook until lightly browned, about 7 minutes. Spoon 3 tablespoons marinara onto each chicken piece; sprinkle each piece with 2 tablespoons cheese. Continue cooking at 370°F until cheese is melted and lightly browned and a thermometer inserted into thickest portion of chicken registers 165°F, about 3 minutes. Transfer chicken to a plate; tent loosely with aluminum foil.

  • Repeat cooking process with remaining chicken pieces, marinara, and cheese. Serve immediately.
