Last Friday night I was getting together with some girlfriends I grew up with in Huntsville. The plan was to meet at my house for wine and an appetizer before we went to dinner at Gianmarco, a neighborhood Italian restaurant. These girls are so special and I wanted to offer an appetizer worthy of the occasion, but I ended up staying at the office longer than I had planned and didn't have time to prepare anything extravagant.

Not willing to settle for chips and dip, I found a recipe for Curry Goat Cheese that seemed to be perfect with only 3 ingredients and a 10-minute prep time. I was a little worried about the curry, though, because not everyone loves that flavor. Well, lucky for me, the recipe has a couple of variations, so I went with the Herb Goat Cheese version. I already had all of the ingredients on hand so all I had to do was stop by the store for a baguette to serve with the cheese.

It took me about 3 minutes to combine the herbs then roll the goat cheese log in the mixture. Then I just wrapped it up and chilled it until everyone arrived. It did get rave reviews, and I just smiled, knowing how little effort I put forth. Great flavor, 3 ingredients, 10 minutes. What else can you ask of an appetizer?
