Goat Cheese for Breakfast
I really do love goat cheese and am happy to report that I will now be eating it for breakfast as well as at lunch, dinner, and happy hour. My friend Tasia, the owner and chief cheesemaker at Belle Chevre creamery, has come up with some amazing new cheeses that are perfect for breakfast: Go "Fig"ure Breakfast Cheese, Cinnamon Chevre, and Coffee Chevre. Each is a spreadable goat cheese that comes in an 8-ounce tub and is easy to keep on hand in the refrigerator.
If you're in the habit of just spreading some plain cream cheese on a bagel and running out the door, I suggest you sit and savor the great flavor of any one of these cheeses spread on a toasted bagel, English muffin, or a piece of toast. Not only is the flavor out of this world, goat cheese is lower in fat that many cheeses made with whole milk and a great way to get calcium, so you don't have to feel guilty about indulging.
Because I am such a coffee fanatic, I think the Coffee Chevre might be my favorite, but tomorrow I might decide I like one of the others better. Close call. Dream with me and think about coffee chevre spread on a chocolate chip bagel, or the cinnamon cheese on a cinnamon-raisin bagel or raisin bread! I wouldn't limit the fig chevre to breakfast alone, even though would be perfect on a slice of toasted honey-wheat toast. But it would also be delicious on baguette slices or crackers, and drizzled with a tiny bit of balsmic vinegar for an appetizer.
