Pimiento cheese is more than a blend of mayo, cheddar, and pimientos—it’s tradition in the truest sense of the word. A Southern kitchen staple, the cheese spread feels just as at home at a casual picnic as it does at the Master’s or the Kentucky Derby.

The creators of Red Clay Gourmet, a North Carolina-based pimiento cheese company, want to take the classic spread to new heights with innovative ingredients and convenient new packaging.

Red Clay’s nostalgic pimiento cheese snack packs puts a Southern spin on Handi-Snack, a lunchbox classic.

The pocket-sized packs—which were released last year—include Red Clay’s handmade pimento cheese, Italian flatbread-style crackers, and a bamboo spreader.

“It’s been a slow process, but we’re finally getting some traction,” said Red Clay co-founder Michele Sawyer. “People are discovering them and realizing that it’s a great snacking option.”

She should know—Michele and her husband, Lance, take pimiento cheese very seriously. They even closed their restaurant, First Street Draught House, last year to focus completely on the pimiento cheese business they started together in 2010.

“We make pimiento cheese for people who really love cheese,” Michele said. “Even people who think they don’t like pimiento cheese love our products. We’ve changed a lot of minds.”
