MyTake: What We Learned This Week—8/5 to 8/11
We're trying to pickle, can, and preserve summer in every way possible.
We’re well into August, school has started in many parts of the country, and yes, we’re already getting those pumpkin bread recipes dusted off for you. But we’re also desperately clinging onto those last, lingering summer vibes, stuffing perfectly ripe peaches and tomatoes into every meal we can think of, slathering mayo (or aioli?) on to too many tomato sandwiches, and trying to make these sunny days stretch for as long as possible.
Our solution to preserving all things summer: We literally got to pickling and preserving every sunny flavor and ingredient we could think of. That bumper crop of summer squash and zucchini? Turn them into tangy-sweet relish to spoon over meat and fish way after the temperature dips below 80. Got gorgeous, bursting-at-the-seams tomatoes? We got to work cooking it into fresh tomato sauce you can enjoy even when the sun starts setting at 5 PM again. And for peppers, blueberries, and okra—who says you can only enjoy them wearing shorts and flip-flops?
For people who can’t live in the same world of blissful, sunny denial, we’re making sure to cover all the bases as families start slipping back into that familiar—but hectic—routine of coordinating drop-offs and pick-ups, getting quick, crowd-pleasing dinners on the table in record time, and starting the new school year with a fresh start.
For tasty, easier-than-they-look snacks that you can slip into lunchboxes or serve up as after-school snacks, these speedy Pizza Rolls and sparkly Unicorn Snack Bars will make you a hero. And for the grownups, we know that fall is a blank slate for you too, so whether you’re recommitting to meal-prepping healthy and delicious meals, resolving to regularly eat a nutritious breakfast, or even trying out a new diet, we’re all treating the slowly changing season as a way to reset, refocus, and set new goals.
