I am a huge fan of olive oil, I have been known to spend as much on a good bottle of olive oil as some spend on wine. So naturally I was thrilled to get Hellmann’s Olive Oil Mayonnaise! It has just the strongest hint of that great olive oil flavor that I love.
So I present you with my recipe pick courtesy of my friends at Hellmann’s:
PASTA SALAD WITH VEGETABLES
8 servingsPrep Time: 20 minutesCook Time: 25 minutes
3/4 cup Hellmann’s® or Best Foods® Mayonnaise Dressing with Olive Oil2 Tbsp. balsamic vinegar1/2 tsp. ground black pepper6 cups assorted fresh vegetables (zucchini, red and yellow peppers and/or red onion), sliced1 box (16 oz.) fusilli pasta, cooked, drained and cooled1/3 cup sliced kalamata or pitted ripe olives1 cup loosely packed fresh basil leaves, chopped
1. Blend 1/4 cup Hellmann’s® or Best Foods® Mayonnaise Dressing with Extra Virgin Olive Oil, vinegar and ground black pepper in medium bowl. Stir in vegetables. Arrange vegetable mixture in grill pan or on foil on grill. Grill vegetables, stirring once, 20 minutes or until vegetables are crisp-tender. Cool.2. Combine vegetables with remaining ingredients in large bowl. Serve immediately or cover and refrigerate until ready to serve.
TIP: Add cut up cooked chicken or flaked drained tuna for a simple main dish idea. Vegetables may also be roasted in the oven.
I love a cold pasta salad in the Summer. And if I have the right size portion, this is perfect for the diet I am on, I add carrots and chicken!
