Cake of the Week: Pound Cake with Strawberry Glaze
Now that it's officially spring, I think it's acceptable to talk about strawberries and, more importantly, strawberry cakes. This Pound Cake with Strawberry Glaze doesn't actually have strawberries in the batter, which you could definitely add if you want to, but it's drenched in strawberry glaze and covered in slices of strawberries. And if that doesn't sound and taste like spring, I don't know what does.
This pound cake is a basic pound cake recipe, but it got rave reviews from the people who made it. The real star of this cake is, of course, the glaze. It's made with fresh strawberries, which are cooked in a saucepan with some sugar, lemon juice, and cornstarch. Then it's drizzled all over the entire thing. Several people who left comments on this recipe also said they didn't even drain the solids, or chunks of strawberry, out of the glaze before pouring it on the cake.
What's great about this recipe is you can switch out the strawberries for other types of fruit. Can you imagine a raspberry glaze? Or blueberry, lemon, peach, or any other type of berry? There are so many possibilities. The recipe also included directions for a second version of this cake with a swirl of chocolate on the inside and a chocolate glaze. Either way, you'll have one tasty cake.
