Cake of the Week: Lemon Bar Cheesecake
I cannot accurately express how excited I am that it's almost springtime. Over the weekend it was bight, sunny, and 70 degrees! It's a little cooler today, but I think if I continue to pretend like it's spring with this Lemon Bar Cheesecake, the gorgeous weather will come back. This cheesecake is packed with lemon flavor from the filling to the garnishes. Sometimes lemon can be overpowering, and if you're wondering if there is too much lemon in this stunning treat, let me reassure you. It's the perfect combination of sweet and tart!
The unique thing about this cheesecake is the crust. Most common cheesecake crusts are made of cookie or wafer crumbs mixed with melted butter, but this cheesecake actually uses a pie crust. You make a homemade pie dough, lay it in the spring-form pan, and press it all the way up the sides. Then you fill the crust with a creamy cheesecake filling layered with bight and colorful lemon curd. After the cheesecake comes out of the oven and cools, you top it with more lemon curd and candied lemon slices. If you're looking for the perfect dessert for a springtime gathering or celebration, this cheesecake is for you, my friend. It's rich, creamy, dreamy, and full of springtime flavors!
