Cake of the Week: Gingerbread Cake with Cream Cheese Frosting
Most of us probably still a little bit full from our Thanksgiving feasts, but it never fails that we still need a little taste of something sweet. After a week of nibbling on what was left of the pumpkin pie and the pecan pie, maybe we need to move on to cake!
I'm trying to get full-on with the holiday spirit (since the local radio station has been playing Christmas music since October!) and am thinking that Gingerbread Cake with Cream Cheese Frosting just might get me there. I love the way that the gingerbread cake fills my kitchen with holidays aromas while it's baking. Sure, you can buy a gingerbread-scented candle, but it's not the same as the real thing baking. Also, this cake is easy - just a one-layer cake in an 8-inch square pan, plus a cream cheese frosting for the top. I've got a lot of holiday errands to do this week and don't have a lot of time for baking and frosting a layer cake.
The other thing I love about this cake recipe is that it's less than 250 calories per serving. Even with the dreamy cream cheese frosting! It's sure to satisfy my need for something sweet but won't keep me from fitting into my holiday little black dress.
