Spring has sprung, and love is in the air, as evidenced by the abundance of weddings that pop up on your calendar like blossoms. Yet with these brightly colored harbingers of wedding season comes great responsibility: the long to-do list of a Maid of Honor.
Luckily for me, I moved from Georgia to Alabama just in the nick of time to avoid the most tedious of the maid of honor’s tasks. However, I still have a prime part to play at the series of bridal showers studding my May calendar. Given my lack of DIY craftiness, I realized that my contribution must be culinary. I also decided it would be classy, easy, delicious, and tailored for my picky, perfectionist sister.
My sister and I are longtime lovers of smoked salmon, so I wanted to incorporate that into an hors d'œuvre that’s equal parts swanky and tasty. Invoking the classic bagel combo of lox and cream cheese, I used this Coastal Living recipe and topped fingerling potatoes with crème fraîche, thinly sliced smoked salmon, capers and ground pepper. It’s an easy recipe that looks fabulous, with the orange salmon popping against the white crème fraîche, and pairs well with a crisp Sauvignon Blanc. Also, this idea can be tailored for a number of palates: sour cream and chives or bacon crumbles, for a classic baked potato feel; or a simple sprig of fresh dill or rosemary. Such a straightforward dish gives you time to remind yourself that all of the hoopla that goes into wedding planning and prepping takes the backseat to the opportunity to spend time with loved ones.
