Aioli (ay-OH-lee) is a garlic mayonnaise from the Provence region in France and a popular condiment there for meat and vegetables. It can be made in advance and refrigerated. (Serves 4)

Mashed sweet potatoes *

* Peel and dice 1 1/2 pounds sweet potatoes. Cook in boiling water 10 minutes or until tender. Drain well, and place in a large bowl. Add 1/4 cup fat-free milk and 1/4 teaspoon salt. Mash with a potato masher to desired consistency.
