Spicy Chicken Cakes with Horseradish Aioli

Mashed sweet potatoes: Peel and dice 11/2 pounds sweet potatoes. Cook in boiling water 10 minutes or until tender. Drain well, and place in a large bowl. Add 1/4 cup fat-free milk and 1/4 teaspoon salt. Mash with a potato masher to desired consistency.

Steamed asparagus


1. While water boils for potatoes:
• Peel and dice potatoes

2. While potatoes cook:
• Prepare chicken cakes

3. While chicken cakes cook:
• Steam asparagus
• Prepare aioli

QUICK TIP: With day-old bread, make breadcrumbs for future use.
