Spice-Rubbed Pork Skewers with Tomatoes

Peanutty couscous: Place 1 1/2 cups fat-free, less-sodium chicken broth in a 1 1/2-quart casserole dish. Cover and microwave at HIGH 3 minutes. Stir in 1 (5.7-ounce) box couscous. Cover and let stand 5 minutes. In a small bowl, combine 3 tablespoons low-sodium soy sauce, 1 tablespoon peanut oil, 1/2 teaspoon crushed red pepper, and 1/4 teaspoon garlic powder. Fluff couscous with a fork, stir in soy mixture, 2 tablespoons chopped roasted peanuts, and 2 sliced green onions.



1. While grill heats:
• Prepare seasoning mixture
• Slice pork
• Season pork

• Prepare couscous

• Grill pork skewers
