Shrimp in Yellow Sauce Menu
* Combine 1 cup long-grain rice, 1 1/4 cups fat-free, less-sodium chicken broth, 1 teaspoon salt, and 2 tablespoons canola oil in a medium saucepan over high heat; bring to a boil. Reduce heat, and add 1/2 cup light coconut milk and 1/2 stalk fresh lemongrass, smashed. Cover and simmer 15 minutes or until liquid is absorbed. Let stand 10 minutes; fluff with a fork.
