Serve chicken with green beans and a generous scoop of mashed potatoes to absorb every last drop of creamy sauce. (Serves 4)

Chicken with Sherry Vinegar Sauce

Rustic mashed potatoes Place 3 cups refrigerated new potato wedges (such as Simply Potatoes) in a medium saucepan. Cover with water; bring to a boil over high heat. Reduce heat to medium, cook 5 minutes or until tender. Drain potatoes. Mash with 1 tablespoon butter, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

Steamed green beans 


Total time: 35 minutes

1. While chicken cooks:
• Mince shallots.
• Chop parsley.

2. While potatoes boil:
• Make sauce.
