Roast Peppered Cornish Hens
Roasted green beans with bacon and almonds*

* Slice 2 applewood-smoked bacon slices crosswise into 1/2-inch-thick slices. Combine bacon, 1 1/2 pounds trimmed fresh green beans, 3/4 teaspoon salt, and 1/2 teaspoon freshly ground black pepper; toss. Place bean mixture in a single layer in a small roasting pan; bake at 400º for 20 minutes or until beans are crisp-tender and bacon is done, turning once. Sprinkle with 3 tablespoons toasted sliced almonds.
