Individual meat loaves, mashed potatoes, and hefty wedges of iceberg lettuce put this meal squarely in the man-food category. But it's light on fat and a comfort food favorite—which makes it great for everyone else, too. (Serves 4)

Mini Meat Loaves

Steak house-style lettuce wedges Combine 2 tablespoons crumbled blue cheese, 1 tablespoon fat-free buttermilk, 2 tablespoons fat-free sour cream, 1 tablespoon light mayonnaise, 3/4 teaspoon white vinegar, and 1/4 teaspoon salt, stirring well with a whisk. Cut a small head of iceberg lettuce into four wedges; place a wedge on each of 4 plates. Drizzle each wedge with about 1 1/2 tablespoons dressing.

1. While oven heats for meat loaves:
• Combine ketchup and mustard.
• Chop onion.

2. While meat loaves bake:
• Prepare lettuce wedges.
• Prepare mashed potatoes.
