Easy Weeknight Meal Menu
Cook the spinach and noodles on the stovetop while the pork is in the oven. (Serves 4)
Pork Tenderloin with Paprika Spice Rub
Egg noodles tossed with butter and chives
* Melt 1 tablespoon butter in a large Dutch oven over medium heat. Add 2 tablespoons minced shallots and 1 minced garlic clove; cook 2 minutes, stirring occasionally. Increase heat to medium-high. Add 1 (10-ounce) package fresh spinach; cook 1 minute or until spinach starts to wilt, stirring frequently. Add a second package of spinach; cook 2 to 3 minutes or until spinach wilts, stirring frequently. Stir in 1/8 teaspoon ground nutmeg.
