Easy Cornish Hen Dinner
• Oven-roasted green beans Combine 1 pound trimmed green beans, 2 teaspoons olive oil, 1/2 teaspoon salt, and 1/8 teaspoon black pepper. Arrange in a single layer on a baking sheet coated with cooking spray; place in oven on rack below hens. Bake at 475° for 10 minutes or until tender, turning once. Remove from oven; toss with 2 teaspoons fresh lemon juice.
• Long-grain and wild rice blend
Total time: 45 minutes
1. While oven heats:
• Prepare glaze.
• Split and skin hens.
• Bring water to boil for rice.
2. While rice simmers:
• Cook rice.
• Trim green beans.
• Place beans in oven during final 10 minutes of hens' cooking time.
