Serve up some Asian-inspired flavors in just 40 minutes with this simple shrimp entrée, cantaloupe salad, and iced green tea. (Serves 4)

Asian Rice with Shrimp and Snow Peas


Spicy-sweet cantaloupe salad: Combine 3 cups cubed cantaloupe, 2 teaspoons chopped seeded jalapeño, and 2 teaspoons chopped fresh mint in a medium bowl. Combine 2 tablespoons fresh orange juice, 1 teaspoon sugar, and 1 teaspoon fresh lime juice, stirring until sugar dissolves. Pour juice mixture over cantaloupe mixture; toss. Chill 30 minutes.

Iced green tea


1. Prepare salad.

2. While salad chills:
• Cook rice.

3. While rice cooks:
• Boil water to cook shrimp and snow peas.
• Trim snow peas, and chop green onions.
