Homemade pita crisps are an ideal accompaniment to this sprightly Mediterranean salad. From start to finish, this dinner takes only 25 minutes to prepare. (Serves 4)

Chicken and Couscous Salad


Pita crisps: Preheat oven to 350°. Split 1 pita in half horizontally, cut each half into 6 wedges. Place wedges in a single layer on a baking sheet. Lightly coat with cooking spray; sprinkle with 1/8 teaspoon salt and 1/8 teaspoon freshly ground black pepper. Bake at 350° for 15 minutes or until pita wedges are crisp and golden brown.
