Serve this stress-free menu to your family on a busy weeknight, or present it to guests at a relaxed backyard get-together. Enjoy corn tortillas as a breadlike side, or spoon the shrimp mixture into them for hearty tacos. Serves: 6
Grilled Fiesta Shrimp
Glazed grilled pineapple
Combine 2 tablespoons dark brown sugar, 1/2 teaspoon grated lime rind, 1 tablespoon fresh lime juice, and 1 tablespoon melted butter in a small saucepan; cook over medium heat 2 minutes or until syrupy. Cut 1 trimmed, cored pineapple lengthwise into 12 long spears. Place pineapple on a grill rack coated with cooking spray. Brush half of glaze over pineapple; grill 1 to 2 minutes. Turn pineapple over; brush with remaining glaze, and grill 1 to 2 minutes.
