• Potato and bell pepper hash Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add 1 cup finely chopped red bell pepper and 1 (24-ounce) package frozen hash brown potatoes with onions and peppers (such as Ore-Ida Potatoes O'Brien); cook 10 minutes or until browned, stirring occasionally. Sprinkle with 3/4 teaspoon salt and 1/2 teaspoon black pepper; toss to combine.
