A couple weeks ago I was given The Hello Kitty Baking Book by Michele Chen Chock and couldn't wait to make something from it. How can you not smile when you see that cute face and bright pink hair bow?

This book has everything from cookies to cupcakes, and macarons to cheesecakes! It also features recipes decorated to look like all the various Hello Kitty characters, not just Hello Kitty herself. There's a Badtz-Maru cake, a Keroppi cake, and cake pops of each of Hello Kitty's friends.

The book starts with some baking basics. You'll learn about the key ingredients you need when baking cookies, cakes, pies, cheesecakes and more! Each recipe has some kind of fun, feline decoration, so there is a section on the baking and decorating equipment that you'll need as well.

I didn't know until I looked through this book that Hello Kitty's favorite dessert is apple pie. In fact, Hello Kitty is as tall as five apples and is the same weight as three apples, which somehow makes her even cuter!

Because Hello Kitty loves apples, I decided to go with the Red Apple Cupcakes. They also double as a back-to-school treat! People have been giving apples to teachers as gifts for a long time, but this is what you should be giving your teachers, boys and girls. These cupcakes are wonderful. They're full of chopped apples and cinnamon, and they make your house smell fantastic while they're baking in the oven. I ate one without frosting while it was still warm and was completely satisfied with it on its own!

These adorable cupcakes are topped with cream cheese frosting, which, of course, is piped to look like apples. I found that the easiest way to make this shape is to use a large round piping tip and hold it over the center of the cupcake. Then pipe out the frosting until you've got a large, round dome shape. While piping, slightly move the decorating tip around in a circle to make the frosting reach all the way to the edges of the cupcake. After that, all you need are pretzel sticks for the stems, and fondant leaves!

The Hello Kitty Baking Book has 20 fun and easy recipes that are perfect for the Hello Kitty fan in your life. I think this book would make a great gift for kids, bakers, and cat lovers.
