Herbed Corn Muffins
These muffins are tender, moist, and light, with a lovely herbal fragrance from parsley and thyme.
Glazed Baby Carrots
To save time, look for prepeeled real baby carrots in microwavable bags.
Smoky Haricots Verts and Mushrooms
Haricots verts are slender green beans; look for them trimmed and ready to cook in microwave-safe bags. If you can't find them, use regular green beans and cook a few minutes longer.
Quick Chilled Pea Soup
Blending a handful of spinach into the soup enhances the green color and adds subtle earthy notes.
Grapefruit, Walnut, and Feta Salad
You can use oranges or tangerines instead of the grapefruit, and goat cheese in place of feta.
Rosemary-Garlic Roasted Potatoes
Look for bags of colorful baby potatoes, which cook quickly. If you can't find them, use halved fingerling potatoes. Squeeze the soft roasted garlic out of the skins, and enjoy with the potatoes.
