Pancakes: The King of Breakfast
Let me start off by saying that breakfast is by far my favorite meal of the day. I love all types of breakfast food--from satisfyingly simple Cheerios, to delicious and decadent Belgian waffles topped with strawberries and powdered sugar. In fact, I love breakfast so much, I often eat it for dinner as well. My roommate can attest to the fact that I’ll take fluffy eggs or hearty oatmeal over a “normal” dinner any day.
But let’s talk about the king of breakfast foods: pancakes. Why do pancakes get special treatment, you ask? Well, first off, the very nature of them is appealing. Cake for breakfast. It doesn’t get any better than that! But pancakes are also great because they are so versatile. Want a good healthy breakfast? Multigrain pancakes should do the trick. In the mood for a fruity morning meal? How do oatmeal raspberry pancakes with berry coulis sound? Peanut butter pancakes, cinnamon-hazelnut pancakes ... the possibilities are endless. Basically, you can throw anything you like in pancake batter, and I promise it will taste delicious.
One of the best pancake recipes I’ve come across combines this tasty breakfast treat with another one of my favorite things: autumn. Yep, you guessed it, I’m talking about pumpkin pancakes! This particular recipe is from the Desserts for Breakfast blog, and is for brown butter pumpkin pancakes with bourbon cream. Look at how fluffy and moist! Is your mouth watering yet?
