Every parent knows (or in my case, every proud aunt) the unspoken word we dare not say in front of the kids, the dreaded "V" word.... cue the music of doom... v-e-g-e-t-a-b-l-e-s. Somehow this essential food group was branded a bad rap for being, "icky." Today, we challenge that misconception with 9 simple clever hacks to make mealtime a little easier on Mom and Dad. So, let's join forces to make veggies less of a chore by serving up these kid-approved foods that they'll never guess are vegetables. Tip: if your veggies are on the verge of decline, freeze them for long-lasting freshness and quick, convenient cooking. Trimmed and washed, store up to 8-10 months.

Butternut squash

Carrot and Parsnip

Red bell pepper

Sweet potato
