Spaghetti with Parmesan and Bacon Recipe

This spaghetti recipe is a "family favorite" according to one online reviewer. The eggs and milk create a rich, creamy sauce that coats the pasta. The key to the creaminess is tempering the eggs - heating them gently so they don't cook too fast and curdle. Do this by slowly whisking in the hot water in which the pasta cooked.

Vegetarian Cincinnati Chili Recipe

Here's a meatless version of a tradional dish in Cincinnati, where chili lovers order their chili by numbers. Serve it over cooked spaghetti for 2-way chili or topped with shredded cheese for 3-way chili. Topping it with chopped raw onions makes it 4-way, while a sprinkling of extra beans takes it to 5-way. We show our chili as 3-way since onions and beans are already part of this meatless version.

Crab C'est Si Bon Recipe

Most docks along the Boston Canal have crab traps tethered to them, so the sweet meat is plentiful and served many ways. This dish was born out of a plentiful amount of artichokes and leftover boiled crab. As the name implies (Crab—It's So Good!), the luxurious sauté of lump crab and artichokes is delicious. Serve it on baguette slices or even tossed with cooked pasta (spaghetti or linguine would be a good match here).

Spaghetti with Bottarga and Almond Bread Crumbs

Spaghetti with Bottarga and Almond Bread Crumbs Recipe

When Piero traveled to the Italian island of Pantelleria, he discovered pasta and capers topped with crushed toasted almonds and bread crumbs. "I thought the almond bread crumbs would be really cool to add to a bottarga dish," he says. Bottarga is cured roe from either mullet (which is slightly waxy and mildly fishy) or tuna (which has a pronounced anchovy flavor); it's sold at specialty food stores. Though it might seem like a white wine dish, this spaghetti is rich enough to pair very well with a light Pinot Noir, like Piero's 2009 Bodega Chacra Barda. If that proves hard to find, look for something similar from Oregon, like the 2008 Adelsheim Willamette Valley.

Spaghetti Aglio e Olio

Spaghetti Aglio e Olio Recipe

"When I cook at home, I use fish sauce in a lot of Italian food," Quealy Watson says. "I took Latin for four years and read most of Apicius [a collection of ancient Roman recipes]. After seeing the prevalence of garum, a fermented fish sauce, in ancient Roman cooking, using fish sauce in Italian food just made sense. It's essentially anchovy juice." Look for crispy fried garlic at your local Asian market.

Spaghetti Carbonara

Spaghetti Carbonara Recipe

Our best spaghetti carbona recipe is silky with egg and melted cheese, freshened with parsley, and spiked with black pepper. We also love this dish for its short cooking time. The ingredients are things we tend to have always on hand, making it the ultimate weeknight-dinner solution. Just add a green salad or seasonal vegetable and the meal is complete. Also, we left out the cream that's often used in spaghetti carbonara in the United States, so it's both lighter and truer to the Italian original. And we've included some variations to keep the recipe interesting in case you find yourself making it over and over again.

Spaghettini with Oil and Garlic

Spaghettini with Oil and Garlic Recipe

In Italian recipes, a simple garlic and olive oil sauce is known as aglio e olio. This classic pasta recipe comes together quickly, so it's a good weeknight dinner. Just pair it with a green salad and a bottle of wine. Spaghettini is in between the sizes of vermicelli and spaghetti, so either of those is a good substitute. Be careful not to overcook the garlic, as browned garlic tastes bitter. Push the garlic to one side of the pan so it will cook evenly.

Spaghetti with Anchovies, Garlic, and Red Pepper with Lemon-Caper Broccoli Recipe

Anchovies break down, or "melt," into the warm olive oil, adding savory depth to this simple pasta toss. For a vegetarian dish, substitute 3 tablespoons chopped kalamata olives for the anchovies. If you boil too much pasta tonight, set some aside before tossing with the olive oil mixture. Reheat on another night by dunking the cold noodles in boiling water for 30 seconds before tossing with your sauce.

Whole-Wheat Spaghetti alla Bottarga Recipe

Bottarga, pressed and salted tuna or mullet roe, may be the most under-appreciated delicacy on Earth. It's expensive, but can be used in small amounts to great effect. And while whole-wheat pasta often gets panned for being coarse, it's the perfect choice here.
