Though it’s most often associated with pies and other autumnal desserts, pumpkin is actually an extremely versatile ingredient. Here are 12 of our favorite ways to use everyone’s favorite gourd: 

1. Pumpkin Pie

Sure, Thanksgiving wouldn’t be complete without a traditional pumpkin pie on the table—but we’re all for breaking out the classic recipe as soon as the weather gets chilly. Feel like spicing things up? Mix it up with our Spiced Pumpkin Chiffon Pie or our Pumpkin-Praline Pie

2. Pumpkin Soup

When you’re craving a rich and creamy soup for fall, look no further than pumpkin. It pairs perfectly with other toasty flavors like coconut (get our Curried Coconut-Pumpkin Soup recipe here), but it’s absolutely perfect on its own.

3. Pumpkin Salad

Add a little color to your salad with some roasted pumpkin. It tastes great, but it’s also packed with fiber and other nutrients—a pumpkin salad will take your meal prep game up a notch.

4. Pumpkin Curry

We love an easy curry on busy weeknights, and adding pumpkin to the mix makes for tasty, hearty, and healthy vegetarian dinner. Serve over basmati or jasmine rice to bring the whole thing together.

5. Pumpkin-Stuffed Ravioli

Pureed pumpkin makes an incredible filling for ravioli, and it’s surprisingly simple to whip up at home. Tip: We love using store-bought wonton wrappers as a shortcut for pasta dough.

Pumpkin butter is as versatile as it is easy-to-make and delicious. Spread it over your morning toast, dip apple slices in it, or just eat it with a spoon.

Waffles are one of our favorite breakfast foods of all time, so making a pumpkinified version in fall feels only natural.
