Here's how to scramble eggs like a pro. The trick? Don't overstir. To scramble eggs, break the desired number of eggs into a bowl. Add water or milk, and salt and pepper, if desired. Stir the eggs briskly with a fork until well blended.   Melt butter in large skillet over medium heat, tilting the pan to completely coat the bottom. Pour in the egg mixture. Cook over medium heat without stirring until the mixture begins to set on the bottom. Draw a spatula across the bottom of the pan to form large curds.
