Buy a bag of shelled pistachios (pistachio kernels) so you don't have to spend time shelling. But if you do buy unshelled nuts, make sure the shells are partially open so it will be easier to get the nutmeat out. Also, closed shells mean that the nutmeat is immature and won't have the delicate flavor that the mature nuts offer.
