Toasted coconut is a simple way to add a little sweetness and a delightful crunch to desserts, hot cereal, and other dishes. To toast a large amount of coconut to keep on hand, spread flaked sweetened coconut in a single layer on a baking sheet. Bake at 325 degrees for 10 minutes or until the coconut is golden. Toss the coconut occasionally while baking, and keep a close eye on it to prevent overcooking. Store it in a zip-top freezer bag or an airtight container.
