Daily DIY: Homemade Chicken Enchiladas
My favorite dish to order at Mexican restaurants is Chicken Enchiladas. I've attempted to make them a few times at home, but it took me awhile to get them just right. When it comes to making homemade versions of restaurant meals, I've learned the best way to start that process is to try a bunch of different recipes until you get close. Then you can tweak the recipe until it's just right.
When I was trying to find the perfect homemade Chicken Enchilada recipe, these Chicken Enchiladas from Southern Living were some of my favorites. All you have to do is prepare the filling, let them bake in the oven, and chop up the toppings! They have the typical filling ingredients, like chicken, cheese, cilantro, and a little bit of salsa. What makes these enchiladas fun is that after they're baked in the oven, they're covered in all the best taco toppings. First they're covered in a layer of creamy taco sauce, and then they're piled high with tomatoes, avocado, olives, green onions, and cilantro. You can leave out or add in toppings based on your preferences, which is another great thing about making enchiladas at home. Watch the video above to see just how easy it is!
