Sometimes when I cook salmon it gets white substance beading all over it. Is it fat, and is it okay to eat?

The white substance that often appears on salmon after it is cooked may look like fat‚ but it is actually protein. Think of it like egg white, which when cooked becomes white and opaque. Like egg white, it is absolutely fine to eat, but it you think it is unsightly or unappealing looking, simply wipe it off.
