"What is the right way to measure flour and why does it matter?"

Flour is pre-sifted and often does not need to be sifted at home. For best results, first fluff the flour, while still in the container, by stirring it briefly with a spoon. Then spoon the flour into a dry cup measure, overfilling the cup so you can scrape off the excess with the flat top edge of the knife. When you measure flour this way, one cup weighs 4 ounces. (If you scoop flour into the cup from your container, it can weigh as much as 5 ounces).
