Some cheese will freeze better than others, but all cheese is likely to undergo changes in texture. Firmer cheese will survive freezing better than softer ones, but in any case, once you've frozen the cheese, it's best used for cooking.

Pre-shredded cheese sold in bags has added ingredients that prevent it from clumping and allow it to freeze more successfully.
