"My chicken is cooked through but not as brown as I want it to be. Do I have to overcook it in order to get the skin crisp and browned?"
When chicken is cooked but not as browned as you would like, here are some quick and easy fixes:
- Place it under the broiler to give the skin a blast of direct heat.
OR
- Brush the skin with a little oil, or coat it lightly it with cooking spray, and put it back in the oven at a higher temperature.
OR
- Do both: coat the chicken lightly with cooking spray (I prefer that to brushing it with oil because it gives it a fine, even mist) and then stick it under the broiler.
