Cook With Confidence: Veggie Fried Rice with Crispy Ham
This week, we're really digging simple, wholesome recipes with very little prep time and very little clean up. You have the whole rest of the holiday season to be frazzled about dinner parties, Secret Santa gifts, and everything else you have going on, so for a busy weeknight, we thought it would really help to highlight a recipe that makes it possible to be in and out of the kitchen in about 20 minutes. This week we're looking at Cooking Light's Veggie Fried Rice with Crispy Ham to be just the thing we need.
No wok required (although if you have one, you can definitely use it!), and boiling of the rice isn't required either. By using quick rice that can be prepped in the microwave, that step is taken care of it as little as 3 minutes. Of course, if you'd rather opt for rice that needs to be cooked the old fashioned way, that's just fine! But if you're looking to save time, quick cooking rice is a great way to be in and out of the kitchen in as little time as possible. I used two bags of brown rice from Uncle Ben's.
The first step here is to cook the ham. For this recipe, I knew I was missing something right off the bat, and that was it - the ham! What I had forgotten to grab at the store I transformed into an opportunity to add something new, which in this cased was sliced mushrooms. This also gave me a great opportunity to show that you can easily opt out of the adding the crispy ham on top of this dish if you have those in your family who are vegetarian or vegan eaters. I added all of the veggie ingredients into my pan and sautéed them together. While these were cooking, I scrambled my eggs in a separate pan.
All while this is happening, I had my two bags of quick rice cooking simultaneously in the microwave. See? I told you this was a fast recipe! Once your eggs and rice are done, simply add them to the pot of the sautéed veggies. Throw in your soy sauce, salt, and pepper, and you're good to go! I mixed all of this over medium heat for a while longer to let the flavors really mesh into the rice.
What you're left with is a super easy meal that only took me about 20 minutes to prepare because everything gets cooked simultaneously. It doesn't get much easier than that! On top of that, using frozen or already prepared veggies speeds up the process that much more. In the end I was left with a flavorful dish that I'd love to make again sometime, although next time I'll be sure to remember the ham. Although, I have to say that it was delicious enough without it, too, for all the vegetarians out there!
