Cook With Confidence: Shrimp and Peas with Farfalle
I love shrimp, and I also happen to be a sucker for hearty, one-dish pasta meals. Naturally, Shrimp and Peas with Farfalle from Southern Living’s April issue immediately got my attention, so I decided to try it out for this week’s #CookWithConfidence post!
The ingredient list in this 30-minute pasta dish is relatively straightforward: salt, pepper, bow-tie pasta, frozen peas, panko, lemon, shrimp and parsley. As long as you have your ingredients prepped before you start cooking, it comes together in a snap.
Make sure to actually measure 4 quarts of water for the pasta. I didn’t measure and had to switch to a bigger pot. In the end, you'll combine the pasta, peas, and shrimp, and you want to make sure it doesn’t boil over the top!
After preparing the pasta and peas, I got started on the panko. Make sure to cook until it’s nice and brown— for me, this process took longer than 4 minutes. The last step is to sauté the shrimp in butter and lemon juice until barely pink.
Afterwards, combine the pasta mixture with the shrimp and stir in a ½ cup of the reserved pasta water. Top the entire dish with the crunchy panko, spicy black pepper, and pretty parsley sprigs for a truly beautiful presentation.
This dish has an amazing lemon-butter, salty taste! Each bite is extremely flavorful— you definitely don’t need to add extra salt or pepper at the table. My guests loved the surprising flavor kick, and everyone returned for seconds. If you love lemon, pasta, or shrimp, this delicious combo is guaranteed to become a regular in your weeknight menu.
