For this week’s edition of #CookWithConfidence, I decided to keep it simple with homemade rice krispy treats. The all-time favorite childhood treat is commonly made by binding rice cereal using a combination of butter and melted marshmallows, but countless recipe variations exist. Because I’m a lover of all things peanut butter, I chose to make these Peanut Butter Crispy Rice Treats.

The recipe for these healthy rice krispy treats calls for just 4 ingredients, including brown rice cereal, natural peanut butter, honey (instead of corn syrup), and dried cherries. However, I made a few not-so-healthy substitutions to work with the ingredients I had on hand. Specifically, I used dried cranberries instead of cherries and Kellogg’s Rice Krispies cereal instead of brown rice cereal. Not only does this recipe require just a few ingredients, but it’s also great for when you’re short on time. My roommate and I whipped these up in a matter of minutes for a tasty after-dinner treat.

First, you’ll need to measure out the right amount of peanut butter and honey. These sticky ingredients can be tricky (and messy) to measure, so check out our How to Measure Peanut Butter and How to Measure Honey videos for a few quick tips. Next, combine the peanut butter and honey in a pot over medium-low heat until they melt together. Once melted, be sure to turn off the stove to avoid overcooking the mixture.

Then, gently fold the rice cereal into the peanut butter mixture one cup at a time while gradually spooning in the dried fruit. If you listen closely, you can hear the cereal crackle and pop as you stir it together! To finish, spread the sticky mixture into a pan and let it chill in the refrigerator for at least 40 minutes before serving. Seriously, can dessert get any easier than that?!
