Cook With Confidence: Nectarine Tarts with Honey
Summer is here, and summer food is where it's at. The fresh produce is plentiful, and because of that, we've got a a great treat to highlight for today's Cook With Confidence post. The thing I loved best about this dessert/breakfast/brunch recipe is that it's SO EASY. It requires four ingredients. Yes, four. I know. And those include items you might already have lying around. If you're like me, and you love the stone fruit family such as peaches, apricots, and cherries, then you're gonna love these, because they feature nectarines! Let's get started, shall we?
First, you'll want to slice up your nectarines to a 1/4 inch thickness. Make sure your nectarines are fairly ripe, but not too mushy. If they're as hard as rocks, you might want to wait a few days before baking these tarts to let your fruit ripen some more. I was able to get the amount of slices I needed (around 2-3 per tart) by using 4 medium sized nectarines.
Pre-made pastry dough is so wonderfully easy and awesome to use. By purchasing it pre-made, it comes as two separate sheets of dough all folded up in a neat little box. Just unfold it, lay it flat, and slice it into multiple 3in x 3in squares. My pastry dough was able to be sliced into 9 squares instead of the 6 posted on the recipe, so I ended up with a few more tarts overall than I bargained for. It's helpful to space the tarts apart from one another so they don't stick together on the pan.
Layer the nectarine slices over the pastry dough, sprinkle some sugar over each one, and voila! You're ready to pop them into the oven. Because there are two baking sheets, halfway through baking (around 10 minutes in) you'll want to switch pans from top rack to bottom rack and vice versa so they bake cook evenly.
When the sides and tops have browned, they're done. For me, this took about 20 minutes. You'll want to let them cool off a bit before enjoying them, because those nectarines will be hot! Drizzle the cooled tarts with plenty of honey, and enjoy! Speaking of honey, have you ever wondered if you can still use honey that has crystalized in the jar? Well, of course you can!
These tarts are reminiscent of a mini pie, and are great with vanilla ice cream! Because the dough is so light and airy, and there is very little sugar involved, you can feel guilt-free while indulging in these yummy treats.
