7 Ways with Miso
So you bought a tub of miso (i.e. for a recipe and now it’s chilling at the back of your fridge, unused). No worries: Because miso paste is fermented, it can last for over a year, and can be incorporated into way more recipes than you’d expect for a serious flavor boost. Don’t feel constrained to East Asian cuisine, or even savory food, either—miso paste works impeccably well in indulgent desserts and sweet recipes too. Miso takes the starring role in these seven recipes, adding a crave-worthy umami punch of flavor.
Pepper jelly (yes, that stuff that’s usually relegated to cream cheese and cracker appetizers) is the secret to the sweet heat of these crispy chicken wings. Vinegar and the deep, salty flavor of miso help balance the sweetness, so the jelly isn’t cloying. Don’t skip out on the Thai basil and scallions—they add bright freshness (and look real pretty).

Miso paste enhances the creamy texture and rich flavor of the peas,making for a soup you're sure to keep on constant rotation through the cold-weather months. Oh, and the addition of bacon only further boosts this soup’s savory yum-factor. However, if you’d prefer to keep the dish vegetarian-friendly, simply leave out the bacon—using a couple tablespoons of olive oil (or your preferred cooking oil) in place of the drippings—and swap the chicken stock for veggie stock.
