This wintry weather sure makes me want something warm to eat! Thankfully, I have the perfect healthy recipe to share that is hearty, flavorful, and easy to make. This sweet yet spicy Turkey Mole Soup is more like a stew and can be eaten alone or doctored up with crushed tortilla chips, cheese, and cilantro. It’s a great way to get most of your daily amount of vegetables and protein, too. This healthy recipe is always a hit and makes plenty of leftovers.
- 1 t oil
- 1 1/4 pounds ground turkey
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 2 T chili powder
- 4 garlic cloves minced
- 1/4 cup bottled mole
- 2 (14.5 oz) cans low sodium chicken broth, combine mole and chicken broth whisk together
- 1/2 cup raisins
- 1/2 t salt
- 1/2 t black pepper
- 1 (19 oz) can black beans drained
- 1 can diced tomatoes (14.5 oz)
- 1 can (4 oz) chopped green chilies
Heat oil in a dutch oven over medium heat. Add turkey, cook 5 minutes or until browned stirring to crumble. Add onion, bell pepper, chili powder, and garlic. Cook 5 minutes stirring frequently. Combine the chicken broth and mole. Add this broth and rest of ingredients and bring to boil. Cover, reduce heat and simmer for 20 minutes.
Can serve with chopped cilantro, crushed tortilla chips an some shredded cheese.
