Croquant is the French word for "crispy" or "crunchy" and these candy-like treats are exactly that. Unlike pralines or brittles that often contain cream and/or butter, this candy contains only sugar, almonds, and water.
The lemon cloud is basically a fallen lemon soufflé. When it falls, becomes even more intensely lemon-flavored and takes on a cake-like texture. The strawberry mint topping is perfect for spring, but you can top the cloud with any fresh fruit.
This fruited snack cake is made with glutinous rice flour (sweet rice flour). So named because it's made from a type of rice that becomes gluey or sticky when cooked, this flour does not contain gluten. The cake is so sweet, tender and delicious that you'll want to enjoy it year-round.
Fill the center of these crispy little meringue cookies with your favorite variety of seedless jam. The raspberry liqueur adds a bit of grown-up flavor, but if you don't want to use it, just leave it out.
