You don’t need permission to eat cake for breakfast. You’re an adult who deserves to treat yo' self occasionally (and your kids—if you have any—just because they love sugar and they’re cute sometimes). Think of these breakfast bars as a no-bake cheesecake that doubles as breakfast and dessert, so you can have the best of both worlds. Prepare the no-bake breakfast bars before bed and you’re all set for sweet indulgence when you wake up. Of course, because this is a funfetti recipe, sprinkles are involved. And sure, these kid-friendly funfetti breakfast bars get a bit messy, but that’s half the fun.
No-Bake Funfetti Breakfast Bars
1 (15.25-ounce) box Oreo Mega Stuf Golden Sandwich Cookies
1 (7-ounce) tub marshmallow cream
1 (8-ounce) package cream cheese
1 ½ cups rainbow sprinkles
How to Make It
Finely crush the cookies using a food processor.
Line the bottom and sides of a square pan with parchment paper and lightly grease it with cooking spray. Press the crushed cookies into the bottom of the pan in an even layer and freeze while you complete the next few steps.
Combine the marshmallow cream and cream cheese in the bowl of a stand mixer. Use the whisk attachment to beat over high speed for 2 minutes. Fold in 1 cup sprinkles.
Remove pan from freezer, and spread mixture over top of the cookie layer. Chill overnight.
Sprinkle with remaining rainbow sprinkles and slice.
